Brenda's Venison Meatloaf

Meatloaf is a favorite around our home because we tend to have plenty of ground deer sausage on hand. And if there are any leftovers, we can enjoy a tasty meatloaf sandwich later on.

1 lb ground deer sausage
1 lb ground deer hamburger
1 medium onion (I like sweet Vidalla onions)
1 bell pepper
2 tomatoes (peeled)
1 cup quick cooking oatmeal (uncooked)
1 tsp garlic powder (more or less to taste)
1 tsp Montreal Steak seasoning (more or less to taste)
1 egg

topping:
1/4 cup tomato paste
1/2 cup brown sugar
1 tablespoon water
bacon strips

Cook:
350 degrees
approximately 1 hour

Chop up the onion, bell pepper, and tomatoes. Mix together with the deer sausage, deer hamburger, oatmeal, garlic powder, Montreal Steak seasoning, and egg.

Place in pan and shape into a loaf. Wrap bacon slices around the sides of the meatloaf. Mix together the tomato paste, brown sugar, and water. Spread on top of the meatloaf.

Cover pan with aluminum foil. Place in oven and bake at 350 degrees for approximately 1 hour. A few minutes before meatloaf is done, remove the aluminum foil so that the bacon can finish browning.

I'm of the opinion that any recipe is subject to change due to your own personal tastes and whatever ingredients you have on hand. Even when I cook venison meatloaves, they hardly ever come out exactly the same each time. That's why I decided to write down this particular recipe. I think it has a very good flavor, and I plan on preparing THIS venison meatloaf again!
