Brenda's Dove Wrapped in Bacon

This past weekend, Kenny joined his cousin and several other fellow hunters in a dove hunt in Gadsen County. It was a windy and rainy afternoon, but that didn't hinder the hunt. At the end of the day, Kenny presented me with 10 beautiful dove, freshly cleaned and ready for cooking. Over the years, I have discovered that bacon is my friend when it comes to cooking wildlife. These little dove wrapped in a blanket of bacon, proved to be a tasty meal.


10 Dove
10 stips of bacon
1 medium onion
1 bell pepper
2 cloves garlic
1 tsp garlic powder (more or less to taste)
1 tsp Montreal Steak seasoning (more or less to taste)
1 tsp salt (more or less to taste)
1/2 tsp black pepper (more or less to taste)
2 stems of fresh rosemary


Mix together the dove, garlic powder, Montreal Steak seasoning, salt, and pepper.
Wrap each dove with 1 slice of bacon.
Place in pan.
Top with sliced onion, bell pepper, garlic, and rosemary.

Cook:
Cover pan with aluminum foil.
Bake at 325 degrees for approximately 1 hour.
Then remove the aluminum foil and place under broiler for a few minutes so that the bacon can finish browning.
